How to: make crispy breadcrumbs

For a crispy bite, breadcrumbs are your best friend. On your fish or meat, in your sauce or, our favorite: over your pasta. Here’s how to quickly make this deliciously crunchy topping at home last minute.

How to make them
To make the crumbs, you need old, dry bread. Don’t have any at home? Simply leave a slice of bread uncovered on a plate overnight and it will dry out by itself. Then cut the bread into pieces and grind it finely in a food processor.
Toast the crumbs on a baking sheet in a preheated oven at 120℃ for 25 minutes. Or in ten minutes at 190℃. No time to prepare them and want to make them now? Use soft, fresh bread, but keep in mind: it will never get quite as perfectly crispy as bread that’s gone stale.

Have crispy breadcrumbs? They’re delicious as a crunchy topping over these baked dishes or sprinkle them over your green beans as a side dish. Breadcrumbs are naturally perfect for a crispy crust on fish, such as in this recipe combined with lemon and parsley. Or turn them into a herb mixture with some garlic, parsley and Parmesan cheese.
Fresh bread
As mentioned: soft, fresh bread produces soft crumbs. It’s best to use them with moist fillings, such as in a quiche or this stuffed porchetta, perfect for the Easter table.
