How to make crispy cookies every time

Do you ever bake cookies, and if so, can you keep your hands off them until they have completely cooled? I can barely manage it, but actually, it’s important to leave them alone for a little while longer…

Let’s be honest: a warm chocolate chip cookie, or an oatmeal cookie, or a spekkoekje that has just come out of the oven – that’s irresistible, isn’t it?! But if you (I) manage to stay away from them for a little longer, I’ll have an even better cookie later.
Bag of tricks
When you take the baking sheet with cookies out of the oven, the process continues for a little while. The moisture in the cookies continues to evaporate, and the more this happens, the crispier they can become. When you’re not patient enough, cookies can lose their shape and break. There is, however, a golden ‘window’ for giving cookies a perfectly round shape with this trick!
Let them cool in the air
It’s also recommended not to let your cookies cool on the baking sheet. Instead, carefully move them to a wire rack if you want the bottoms of the cookies to become deliciously crisp as well. In short: with as much patience as possible, you’ll soon have the crispiest cookies. Except for that one warm cookie, of course…
