How to make unbelievably delicious and silky sesame chicken

A pot of hot broth in the middle of the table and let the hotpotting begin! Although… you can’t just start hotpotting. Because what you cook in the hotpot is at least as important as the soup itself. In his new book Hot Pot, Bas Robben explains step by step how best to approach it, what you need and, of course, the tastiest recipes, such as this silky sesame chicken for the hotpot, so you can get started right away.

How to make silky sesame chicken
- Place the chicken breast in the freezer for 30 minutes so it becomes a little firmer. You can now cut it more easily into 1 cm slices. Place the slices in a bowl. Mix the salt, egg white, miso and cornstarch with 2 tablespoons of water until smooth. Add to the chicken breast. Mix well with a flexible spatula or your hands. Cover and leave to marinate in the refrigerator for at least half an hour.
- Sprinkle a plate with the black and white sesame seeds. Dip both sides of the chicken breast slices into the mixture. Then place them on a plate and refrigerate until you sit down to eat.
