Indonesian Hussar Salad: Our Favorite Family Recipe

A true family recipe
This Indonesian Hussar salad is not just any salad, but a story on your plate. It dates back to the time when many families from the Dutch East Indies came to the Netherlands. During those years, they combined familiar flavors with new ingredients that were available here. The result? A dish with a Dutch foundation, but an Indonesian soul.

You are unlikely to come across this Hussar salad in Indonesia, but here in the Netherlands it is a beloved family recipe. Originally made by grandmother, later by mother for father, and now passed on to a new generation. Indonesian Hussar salad: here’s how to make it
This recipe is an ode to the cuisine of the past, when something magical was created with few resources. And let’s be honest: the best recipes always come from grandma, right?
Method:
- Heat some butter in a deep pan (with a lid) and brown the beef nicely on both sides. Season with salt and pepper.
- Now add the water, stock cubes, thyme, cloves and bay leaf to the meat and simmer for 3.5 to 4 hours.
- Cook the potatoes, green beans, carrots and beets separately until tender. Allow them to cool briefly and keep them alongside the sliced cucumber, pearl onions and pineapple.
- Add all the ingredients together once they have cooled properly.
- Sauté the finely chopped shallots in some sunflower oil. Remove the pan from the heat when the onions begin to release their aroma.
- Beat the eggs together with the vinegar, sugar, and salt and pepper to taste.
- Return the pan with the onions to low heat and slowly add the egg mixture. Stir well. It must not split and the egg must not set. Remove the pan from the heat when the mixture starts to thicken slightly.
- Now add the mayonnaise and mix well.
- Add the mixture to the salad and mix well.
- Finally, shred or pull apart the braised beef and add it to the salad. And that’s your Indonesian Hussar salad ready!
