KLM has signed Brazilian celebrity chef Rodrigo Oliveira for its onboard meals

Delicious food on board makes every flight that much more enjoyable. And for people flying back from Brazil, it’s an even bigger celebration: for a year, KLM will serve culinary delights created by Brazilian celebrity chef Rodrigo Oliveira on board.

A small side note: for now, the meals are only served to passengers in World Business Class and Premium Comfort Class on flights departing from São Paulo and Rio de Janeiro, but there are whispers that Rodrigo’s meals will eventually also be served in Economy Class.

Top chef Rodrigo Oliveira

He’s a star in Brazil. Not only because of his restaurants’ accomplishments – Rodrigo Oliveira is head chef of the award-winning restaurant Mocotó in the working-class neighborhood of Vila Medeiros and Balaio IMS (both in São Paulo) – but also because of his role as a judge on MasterChef Brazil. KLM began its collaboration with Rodrigo back in 2014, when he was still a rising star, but by now he has far surpassed that status. What has remained is Rodrigo’s down to earth nature and his cooking style, with which he touches people’s hearts.

He creates dishes like the ones you eat at home; without any fuss, but packed with pure flavors. He also wants his restaurants to be accessible to everyone, so he has no intention of leaving Vila Medeiros. Because of his democratic approach to cooking – dishes and prices that are available to everyone, regardless of background or status – he would also like to bring that inclusivity on board. It’s only a matter of time before Economy passengers can enjoy his dishes too.

Brazilian dishes

For KLM, Rodrigo Oliveira created several original Brazilian dishes with an international approach, including a Northern Brazilian bean salad with pumpkin, coconut and urucum (a Brazilian plant widely used as a spice), marinated prawns, and sea bass with a plantain purée, spinach, chestnut beurre blanc and spiced Brazilian nuts. Now that’s something different from pasta with chicken breast in tomato sauce.

The dessert comes from his restaurant Mocotó and honestly: we’ve never eaten such a delicious dessert on a plane before: refreshing little tarts, chocolate bombs; absolutely heavenly!

KLM flies daily from São Paulo and Rio de Janeiro to Amsterdam.
