Meat pastries by star chef Soenil Bahadoer

During the coronavirus crisis, star chef Soenil Bahadoer decided to drive his Spicy Chef food truck all over the country and serve the very best Surinamese street food. In his new book Streetfood, Soenil shares the recipes for the most popular dishes and snacks from his food truck, including these meat pastries.

How to make the meat pastries
- Preheat the oven to 200 °C.
- Heat the butter in a pan and sauté the onion in it. Add the tomato purée. Then add the minced meat with pepper, salt and nutmeg. Next, add the cumin and masala, and stir everything together well. Then cook the fresh chilli along with it.
- Mix the gherkins, peas, carrots, capers and eggs into the mixture and season with pepper, salt and leaf celery.
- Fill each sheet of puff pastry with the filling. Fold the sheets closed and brush the edges with beaten egg. Press the edges firmly closed with a fork. Brush the pastries with beaten egg and bake them in the preheated oven for 8 minutes until golden brown.
