Mexican Style: This Is How You Snack with Your Margarita!

Anyone who loves cocktails knows: an ice-cold Margarita is always a good idea. Seasoned cocktail drinkers also know: drinking cocktails without eating something alongside them is never a good idea. But what is the tastiest snack to enjoy with your Margarita?

Recently, we sang the praises of one of our favorite cocktails: the Margarita. Wonderful to sip by the pool or at your favorite cocktail bar, but also delicious at home. Especially with a Mexican snack on the side! Alexis Delassaux is one of the pioneers of French-Mexican gastronomy in Paris, and we got his favorite dishes to enjoy with a Margarita: tostadas gambas and salmon ceviche.

How to make tostadas gambas

Ingredients:
2 corn tortillas | 100 g oil (for frying) | 6 small prawns
For the chipotle mayonnaise: 20 g chipotle purée | 1 egg yolk | 100 g sunflower oil | 3 g salt
For the mango chutney: 1 mango, 1 red chili, 1/2 red onion, 1/4 bunch cilantro.

For the mayonnaise, put the egg yolk, chipotle purée and salt in a blender and mix while gradually adding the oil. Finely chop all the ingredients for the mango chutney and combine them. Fry the corn tortillas in the oil until crispy. Fry the prawns in olive oil for 2 minutes. Spread a thin layer of chipotle mayonnaise on the tortilla, add 1 spoonful of mango chutney and the warm prawns.

How to make ceviche with salmon

Ingredients:
100 g fresh salmon | 2 passion fruits | 1 orange | 1 grapefruit | 15 g olive oil | 1 lime | 3 g salt | 2 g sweet chili powder

Carefully cut the passion fruits in half and set the juice and shells aside for serving. Peel the orange and grapefruit and cut the segments into cubes. Finely chop the salmon. Put it in a bowl and add the citrus cubes, passion fruit juice, lime juice, salt and chili powder. Mix everything well and spoon into the passion fruit shells.

So make that Margarita quickly

Making a Margarita is not difficult at all. The recipe for the original Margarita is iconic (30 ml Cointreau, 50 ml tequila, 20 ml fresh lime juice and a salted rim), but its success lies in the endless possibilities for variation. Make a pink Margarita by adding 5 ml rose syrup and using Himalayan salt instead of regular salt on the rim of the glass. So make one quickly!
