Mozzarella Onion Rings by Tasty

Do you know those Tasty cooking videos that appear in your Facebook timeline? They make many a follower’s mouth water with their delicious recipes, and now you can find them all in a cookbook. From lava brownies to skillet chili hot dogs, and these cheesy onion rings.

Why would you eat ordinary onion rings when you can put cheese in them too? A mozzarella onion ring is heaven on earth. Frying them in batches is crucial so that the rings do not touch each other and become beautifully crispy.
Method
1. Cut the onions into 1 cm-thick rings and separate the rings. Stack the mozzarella slices in two large piles and cut those piles into strips 1 cm wide.
2. Work on a cutting board and place a small onion ring in the middle of a larger one, creating concentric circles. Use as many mozzarella strips as needed and cut them to size if necessary to fill the space between the rings so that everything fits together precisely. You may need more than one layer of cheese, depending on the gap between the rings. Repeat with the remaining onion rings and cheese and make approximately 26 onion rings. Place the filled rings on a baking sheet and let them firm up in the freezer for about 1 hour.
3. Put the wheat flour, eggs and breadcrumbs in separate shallow bowls. Season each bowl with pepper and salt.
4. Coat a frozen onion ring in the flour, shaking off the excess, then dip it in the egg, allowing the excess egg to drip back into the bowl. Coat the ring in the breadcrumbs, then dip it in the egg again and finally coat it in the breadcrumbs once more. Press it in firmly so it is covered all around. Return the ring to the tray and let it dry. Repeat with the remaining rings. Let the rings harden on the tray in the freezer for at least 1 hour and up to 1 week.
5. Fill a large pan with a 5 cm layer of oil and attach a deep-fry thermometer to the side. Heat the oil over medium-high heat to 175 °C.
6. Fry 2–3 onion rings at a time, stirring occasionally, for about 2 minutes until golden brown. Do not fry them for too long, to prevent the cheese from running out. Use tongs to place the rings on a rack with kitchen paper underneath and let them drain.
7. Sprinkle basil over the fried rings. Serve hot with marinara sauce for dipping.
