Mussels in Tomato Sauce

Before you get started, read here first about how to cook mussels perfectly.
Put the olive oil in a pan and add the onion, red chili pepper and garlic. Heat while stirring with a wooden spoon for about 3 minutes, making sure the ingredients do not brown.
Then add the thyme, oregano, bay leaf, cayenne pepper and peeled tomatoes. Let everything simmer over low heat. Season with a little salt, and stir everything well so that all the ingredients come together. After about 4 minutes, deglaze with the white wine.
As soon as everything starts to boil, add the mussels. If the sauce is a little too thick, you can add some water. Then put the lid on the pan, but stir the mussels every minute or so. After about 3 minutes, add the parsley and mix it well into everything. After another 3 to 4 minutes, the mussels are ready.
Discard any shells that have remained closed, and serve the rest of the mussels on a platter with the sauce.

Tip: serve the mussels with a piece of crusty farmhouse bread; it makes them even more delicious.
