New: The (Big Fat) Vega Club in Hilversum

Hospitality entrepreneurs certainly know how to stay creative during a pandemic. For instance, star chef Joris Bijdendijk of Rijks* restaurant opened a Ferris wheel restaurant and Felix Meritis organised a 360-degree food experience in a concert hall. Gooiland in Hilversum also came up with a new creative concept, namely De (dikke vette) Vega Club.

Pop-up restaurant
High-quality vegetarian food in a club setting full of interaction and surprises: that is what pop-up restaurant De Vega Club is all about. The concept, which was actually intended for corporate events, could not go ahead because of the coronavirus crisis, so owner Philip Lammers decided to approach it differently. “We have to remain creative and look at what is possible,” says Philip.

Four-course vegetarian menu
Chef Wouter Berghuis, who has worked at the Michelin-starred restaurant Cheval Blanc in Heemstede, among other places, will prepare the tastiest—yes, you guessed it—vegetarian dishes during the De Vega Club evenings, using fresh local and seasonal produce. His food is refined, light and fresh, and is characterised by surprising combinations. You can recognise Italian and Asian influences in his dishes. And apparently the concept is catching on, because the first weekend was completely sold out. After that, things were quiet for a while, because of the hospitality industry shutdown… From 1 January 2021, you can reserve again for a top evening. A four-course menu including amuse-bouches costs €49.50 per person, and you can reserve a table here.
