Flemish TV cooking channel njam! presents a new cooking series with the internationally acclaimed vegetarian chef Nicolas Decloedt. Decloedt is a pioneer in what is known as botanical gastronomy.

His plant-based fine dining restaurant Humus x Hortense was named The Best Vegan Restaurant of the World last year by the We’re Smart Green Guide and ranks number 7 in the Top 100 Best Vegetables Restaurants. His restaurant in Brussels is known for its botanical tasting menu, based on no fewer than 24 (!) micro-seasons, which the top chef (who previously worked at, among others, the renowned Mugaritz) distinguishes between. The menu changes weekly and is created based on what his wild picking garden Le Monde de Mille Couleurs has to offer. It is no coincidence that his restaurant has grown into a food destination for vegetarian and vegan enthusiasts.

100% plant-based

In each of the six episodes, Nicolas puts one vegetable centre stage, fresh from the field and grown locally. He shows how to prepare original dishes using only plant-based products that anyone can make at home. For example, he transforms parsnip and carrot into desserts and pays tribute to the tomato with special salads and matching mocktails. In short: no meat or fish, but plant-based and sustainable, and therefore all fresh from the field.

When?

Veldvers can be watched from 3 May every Sunday at 11:00, 16:00 and 23:00 on njam! In the Netherlands, the series is broadcast on channel 39 (via KPN’s basic package) and can also be watched online via www.njam.tv.
