Nigella’s Crispy Chicken

Nigella Lawson is the queen of simple home cooking. For weekday meals, we often leaf through her many cookbooks. This crispy chicken is a perfect example of that.

By flattening the chicken breast (normally a fairly dry cut of meat) and marinating it in plenty of mustard, the meat becomes much more tender. It gets its crunch from crispy cornflakes, and she also immediately tells you how to make a fresh salad to go with it.
