Njam! presents new series with Dutch star chefs

Cooking TV channel njam! launches the new TV series Bon Chef! starring top Dutch chefs. SVH Master Chef Michèl Lambermon travels by motorcycle to visit renowned Dutch star chefs and challenge them to create spectacular artisanal preparations using the iconic kamado. He visits five top chefs, together accounting for ten Michelin stars, to cook together with them.

In each episode of the series, he cooks with one star chef, with whom he creates a special dish: Jonnie Boer (De Librije ***), Dick Middelweerd (De Treeswijkhoeve **), Martin Kruithof (De Lindenhof **), Erik van Loo (Parkheuvel **) and René Brienen (Brienen aan de Maas*).
Kamado
Cooking with a kamado, a kind of multifunctional luxury BBQ, has become hugely popular in recent decades. Star chefs also discovered the tool years ago. The Big Green Egg is one of the pioneers of kamado cooking in the Netherlands. The kamado originates from Japan and made its way to the US after the Second World War, and from there to Europe. A kamado is a ceramic BBQ that regulates and retains heat exceptionally well.
The kamado can be completely sealed both at the bottom and at the top. This means that the heat, as well as the smoke and barbecue flavour, are retained effectively. It also allows you to grill and cook with an accuracy of just a few degrees. A kamado can do much more than just grilling, as with an ordinary charcoal BBQ. You can also use it for roasting (as in an oven), smoking, steaming and baking (focaccia, pizza).
Recipes
In the series, top chef and self-proclaimed Big Green Egg fan Jonnie Boer cooks with local ingredients and vegetables and herbs from his regular grower Eef, and together with chef Michèl Lambermon, he makes a Michelin-worthy celeriac soup with one of his favourite ingredients: crayfish, during a jam session.
Martin Kruithof, chef of two-Michelin-starred restaurant De Lindenhof in Giethoorn, is a great lover of eel and makes one of his signature dishes in Bon Chef!: pike-perch, eel and water mint.
With top chef Dick Middelweerd, chef Michèl Lambermon heads into nature to create a local dish with regional produce: hay-cooked farm chicken jambonneau.

Chef René Brienen is known for his hay-based preparations. For the series Bon Chef!, the patron cuisinier made a whole ham with asparagus grilled on the kamado. The recipe he presents is a simplified version with (brined) ham hocks that home cooks can also prepare successfully.
Broadcast
The series Bon Chef! is broadcast on njam! on weekdays, Monday through Friday, at 5:20 p.m. Njam! is broadcast on channel 39 (via KPN’s basic package).
