Not Grilling, but Smoking

The meat in the photo above wasn’t cooked on the barbecue, but spent a few hours in the Masterbuilt smoker.

The Masterbuilt (190 euros) is as ugly as sin, but everything you make with it turns out insanely delicious. The meat becomes wonderfully tender, fish retains its moisture, and everything gets that subtle smoky flavor.
Barbecue Legend
It does take a little longer. Grilling a steak on the barbecue takes a maximum of about eight minutes, while with this unit you’ll be busy for fifteen minutes. But according to barbecue legend Myron Mixon, this appliance—or any other smoker—is absolutely worth the wait. “In a smoker, you add wood chips, which allows that smoky flavor to penetrate the meat even better. And according to Mixon, that smoky flavor the food acquires is actually one of the reasons we barbecue. Out with the barbecue, bring on the smoker.
