We’ve found it: the most divine cheesecake of the moment. Because this white chocolate cheesecake with spiced cookies isn’t only suitable for Sinterklaas Eve. Not at all—just make it now; after all, the gingerbread cookies are already in the shops!

To make this heavenly cake according to the recipe from Welke.nl, you only need 9 ingredients and less than two hours of your time.
How to make the white chocolate spiced cookie cheesecake
- Preheat the oven to 180 degrees. Then finely grind the speculaas cookies in a food processor or another appliance. Put the butter in a bowl and melt it. Then mix the speculaas crumbs with the melted butter until smooth.
- Line a cake tin with baking paper and grease it well; you’re now going to make the cake base. Put a layer of speculaas crumbs in the cake tin and press it down firmly. Bake this for 15 minutes. After 15 minutes, remove the cake tin from the oven and lower the oven temperature to 130 degrees.
- Melt the chocolate and stir in the heavy cream. The easiest way to melt chocolate is using the bain-marie method. Place a bowl of chocolate over a pan containing a small layer of water, then put it on the heat and let the chocolate melt.
- It’s now time to make the caramel sauce. Put 100 grams of sugar and 4 tablespoons of water in a saucepan and bring to a boil. As soon as the sugar starts to turn brown, gently stir it and add the 200 milliliters of heavy cream.
- Put the cream cheese and sugar in a bowl and mix until smooth, then add the eggs and mix everything together. Next, add the white chocolate mixture you made in step 3, and finally add the spiced cookies.
- Take your cake tin and pour in the mixture. Then divide the gingerbread cookies and cooled caramel sauce over the cake. Bake the cake for 60 minutes at 130 degrees. Once the cake is ready, let it cool in the refrigerator for at least four hours.
And as if this weren’t divine enough already, we’re also making a South African caramel sauce to pour over it. Ir-res-is-ti-ble!
