Opening soon: Choucrouterie pop-up in Amsterdam

Also a fan of sauerkraut? Then we have great news. The sausage makers at Brandt&Levie are launching Choucrouterie. Choucroute is French for sauerkraut, and that is exactly what these men will be serving in this pop-up restaurant.

Choucrouterie is a unique (temporary) restaurant that pays tribute to this winter classic. Partners in the project are Ard Muntjeswerf and chef Timo de Beurs, former sous-chef at Gebroeders Hartering and previously also employed at Merkelbach and a la Ferme. A classic sauerkraut dish naturally calls for responsibly sourced and incredibly delicious pork. And the pig is the great love of these sausage makers. Hence this special collaboration.

Rijsel
Samuel Levie, co-founder of Brandt&Levie: “We have been organizing the annual sauerkraut evenings at Rijsel for some time now and thought it would be fun to do a pop-up, for which we recently found a great location. We will be serving what we believe is the ultimate sauerkraut dish. Our fresh sauerkraut is braised for an extra-long time, which makes it caramelize and develop color. That gives it an incredible flavor. Not that bland sauerkraut you sometimes see elsewhere.” And of course, the sauerkraut is accompanied by the finest pork. Homemade Kasseler rib, the tastiest bacon, Frankfurter sausages and fresh sausages. And … potatoes fried in lard.

Former Flo
Choucrouterie is located in the heart of Amsterdam, near Rembrandtplein, in the location where restaurant Flo (in the Eden Hotel) was based until last month. The restaurant (approximately 80 seats) opens on February 1 and will be open throughout February on Thursdays, Fridays and Saturdays, from 18:00.
