Bizarrely creative with pickles

By now, we know that love for pickles can run deep, and even picklebacks are no strangers to us (a shot of Jameson, a shot of pickle juice, done). But there’s always a next level, right?

In Mount Olive, North Carolina, the annual Pickle Festival takes place every spring, with the pickle starring in all kinds of forms. Peanut-flavored pickle? Yes. Pickle-flavored popcorn? Check. Pickle slush puppies? Absolutely. (Most) pickle-eating competition? Of course. And, as the pickle on the cake:

Pickle popsicles!

Here’s what you need for the pickle popsicles and how to make them

  • Ice pop mold (for 6 popsicles, for example)
  • 250 ml pickle juice
  • 1/2 tablespoon granulated sugar
  • 12 pickle slices
  • Whisk the pickle juice (from the jar) and the sugar together.
  • Place two pickle slices in each mold.
  • Carefully pour in the sugary juice.
  • Put the lids on.
  • Leave in the freezer for at least 4 hours.
  • Before serving, briefly hold the mold under the warm tap to loosen the popsicles.
  • Enjoy!
