Recipe: An Italian quiche you’ll absolutely love

Why make things difficult when they can be easy? Tortillas or filled wraps are the perfect quick meal, snack or bite with drinks. How to make the Italian tortilla quiche
- Preheat the oven to 200 °C.
- Cut the leek into half rings and the courgette into half-moons. Halve the cherry tomatoes.
- Heat a frying pan without oil and fry the bacon until crisp. After 3 minutes, add the courgette and leek. Fry for approximately minutes until soft and cooked through.
- Meanwhile, whisk the eggs with the crème fraîche, Parmesan and pesto. Season with salt and pepper to taste.
- Line the sides and bottom of a deep, round oven dish with the tortillas. Stir the bacon and vegetables into the egg mixture and spread it over the tortilla base.
- Distribute the cherry tomatoes over the quiche filling, cut side up.
- Bake the quiche for 45 minutes, until the egg has set. Delicious both hot and cold.
