Recipe: apple-coconut bars

We still have to wait a little while for the new season of Heel Holland Bakt with new bumbling home bakers. In the meantime, we can simply bake away with the new Heel Holland Bakt Appeltaart baking book. The baking book is packed with delicious recipes using apples (and pears!), such as these apple-coconut bars, to bake at home.

A healthy snack for on the go. You can also make so-called bliss balls from the bottom layer and roll them in finely grated coconut. Of course, they don’t need to go in the oven then. Just as tasty and even quicker to make.

How to make the apple-coconut bars

1. MAKE THE DATE BASE

  • Preheat the oven to 160 °C. Line the baking pan with baking paper. Put the apple chips in the food processor and grind coarsely. Add the dates, oats, coconut and tahini and grind until you have a smooth, firm mixture. Put the mixture in the baking pan and press it into an even layer with the rounded side of a spoon or with your fingers.

2. APPLE-OAT TOPPING

  • Grate the apples over a large bowl and mix them with the rolled oats, sesame seeds, pumpkin seeds, maple syrup and oil. Spread this over the date base and bake the bars in the center of the oven for approximately 30 minutes until cooked through and crisp. Sprinkle the coconut flakes over them 5 minutes before the end of the baking time. Allow to cool completely on a wire rack, then cut into 12 bars or 24 squares
