Recipe: Bacon Sheet Cake by Jord Althuizen

Jord: “‘Shall I make a bacon sheet cake?’ Whenever my mother said this, my brother’s and my ears perked up and we would already roll up our sleeves. Because as soon as the steaming dish was put on the table, we forgot everything and everyone around us and fought over the last pieces. A family recipe, then, which has remained intact apart from the addition of some chives (sorry, Mom); we swapped the oven and baking tray for the BBQ and skillet. The onion chutney we still had from another recipe turned out to be a killer combo, so you can make that too and spoon it over the top.”
How to make the bacon sheet cake
- For the chutney, peel the onions and cut them into quarters. Heat 1 tablespoon of oil in a skillet and fry the onions on the cut side until dark brown/black. Turn the heat down low and add the remaining ingredients. Allow to cook slowly until the onions are soft.
- Prepare a BBQ for indirect grilling and heat it to 200 °C. Line the skillet with baking paper and spread the puff pastry over the bottom, forming a raised edge.
- Press the overlapping edges firmly together and prick the base with a fork. Crumble the rusk and spread it over the puff pastry; this absorbs the moisture and gives you a crispier base. Cover the base successively with the slices of bacon and cheese.
- Beat the eggs with the sour cream and stir in some salt and pepper, as well as the paprika powder and chives. Spread the mixture over the cheese. Place the skillet on the BBQ grate and close the lid. Bake the bacon sheet cake for approximately 30 minutes, until the puff pastry is crisp and the filling is golden brown.
- Roll up your sleeves, serve the bacon sheet cake with the lukewarm onion chutney, and use your elbows to keep your fellow diners at a distance while you devour piece after piece.
