Recipe: bean salad with crayfish and baby potatoes

Take cover! Women and children first! The Netherlands is apparently being overrun by the non-native American crayfish: news that mainly makes us salivate here in the editorial office.

I’m really not going to make light of the nuisance caused by “groups of crayfish walking around or gathering” in the West Frisian municipality of Stede Broec. I mean, every municipality has its own loitering-group problems, right? But to lend the people of Stede Broec a hand, you could hurry over there with a bucket and then make the recipe below. Or you can buy them ready-made, that works too.

How to make it

  • Peel and boil the baby potatoes until tender, about 10 minutes, in salted water.
  • Steam the soybeans until tender too!
  • Rinse the kidney beans and leave to drain in a sieve or colander.
  • Wash the celery and cut into rings.
  • Wash the radishes and cut into quarters.
  • Coarsely chop the parsley.
  • Make a simple dressing with the yogurt, mayonnaise, mustard and olive oil.
  • Add salt and plenty of pepper to taste, and loosen the dressing with a tablespoon of water.
  • Mix everything together.
