Recipe: Cheesy nachos with sausage and egg

A bowl full of crispy tortilla chips, melted cheese, fresh salsa and a generous dollop of crème fraîche: nachos are the ultimate snack for drinks and nibbles. Normally we top the mountain with beans, minced meat and classic guacamole, but this time we’re going for a perfectly fried egg and Italian sausage. Delicious!

To make sure the nachos stay crispy, it’s best to first give them some colour around the edges without cheese in the microwave or oven. Then build them up layer by layer, so you taste all the ingredients in every bite. By the way, don’t place the baking tray too high in the oven under the grill; somewhere in the middle is fine. That way, there’s less chance of the chips burning!

How to make Cheesy nachos with sausage and egg

  • Preheat the oven to 200 degrees.
  • Bring the water, vinegar, sugar and salt to the boil in a saucepan. Remove from the heat, add the onions and leave to cool in the refrigerator.
  • Tip: You can keep pickled red onion in the refrigerator for about 2 weeks, so you can also do this ahead of time.
  • Heat a frying pan over medium heat. Squeeze the sausage meat out of the casing, break it into coarse pieces and fry until the sausage is cooked through. Meanwhile, drain the chilli beans well.
  • Spread 1/3 of the nachos over a baking tray lined with baking paper and top with 1/3 of the cheese, 1/3 of the sausage and 1/3 of the chilli beans. Repeat this 2 more times until all the ingredients have been used.
  • Bake the nachos in the oven for 10 to 15 minutes, until all the cheese has melted.
  • Meanwhile, fry the egg in the same pan used to fry the sausage and season with salt. Also lightly mix the crème fraîche with some hot sauce until there is a hot sauce swirl running through the crème fraîche.
  • Serve the nachos with the fried egg, pickled red onion, jalapeños and the crème fraîche with hot sauce.
