Recipe: Kara Lahana (Turkish kale from the north)

blz. 96 HetLekkersteUitTurkije-KaraLahanaYemeg

The Tastiest from Turkey is the ultimate cookbook if you want to get to know Turkish cuisine. Author Hilal Kayis shows you what makes the cuisine of her homeland so special. Because we all know Turkish mezze, sigara börek and lamb köfte (all incredibly delicious, by the way!), but this rich cuisine is so much more than that. Every region in Turkey has its own flavors. The same goes for this kale from the northern part of Turkey.

Who says only the Dutch eat kale? Turks from the north know what to do with it too! This dish gives your kale a whole new dimension.

How to make Kara Lahana (Turkish kale)

  • Rinse the rice well until the water running off is clear.
  • Heat the olive oil and sauté the onion in it together with the red pepper paste, chili flakes, salt and pepper.
  • Fry the rice along with it for 5 minutes and add the kidney beans and kale. Stir everything for a few minutes and pour in 400 ml of water. Bring to a boil and cook for 30 minutes with the lid on the pan.
