These sigara börek from her cookbook Fidan’s Family Food owe their name to their shape: the same as a cigar. In this recipe from her mother, Fidan fills the cigars with feta and parsley.

Fidan: ‘No one makes sigara börek as deliciously as my mother. No one. The preparation, the aroma, the softness and the memories make her sigara börek priceless. Besides being delicious, I also think the dish looks very chic. Lovely to serve as a starter during a dinner.’

How to make sigara börek

Mash the cheese with a fork and mix in the parsley. Lay out a sheet of yufka pastry with the wide edge of the triangle facing you. Lightly brush the pastry with a little water and place some of the cheese along the wide edge.

Now first fold the left and right points inward, then roll up the sheet of yufka pastry into a little roll (cigar). Because you moistened the sides, the pastry will stick together and retain its shape.

Heat a layer of oil in a deep frying pan. Carefully place the sigara börek in the pan and let them turn lightly golden brown over medium heat. Most will turn over by themselves when they are cooked on one side; some may need a little help turning. As soon as they are ready, place them on a plate lined with paper towels.

Serve with a salad for lunch or as an aperitif with hummus or Turkish yogurt on the side.
