Recipe: chicken tacos with mango and avocado

How to make chicken tacos

  • Heat the oil in a large frying pan over medium heat. Fry the chicken for 2 minutes and add the garlic, paprika powder, cumin, coriander, and salt and pepper. Fry for another 3 minutes, until the chicken is just cooked, and turn off the heat.
  • Get your plate and place the tacos on it. Spoon one-third of the mozzarella onto one half of each taco. Divide the chicken and mango over them. Sprinkle each taco with some fresh coriander (if you’re not a coriander hater… and save some for sprinkling on top) and fold the empty taco halves over the filling.

  • Put your pan back over medium heat. There should still be some oil in the pan (and some spices), but add a little extra oil if necessary so the tacos don’t stick. Place the tacos in the pan and fry for 2 minutes, until the underside is golden and crisp. Turn them over and fry the other side for 2 minutes as well.
  • Meanwhile, stir the sour cream and lime juice together in a small bowl with a pinch of salt.
  • Place the tacos on a plate and tuck a few slices of avocado into each taco. Sprinkle with the remaining coriander and dip the tacos in the lime crema while eating.
