Recipe: Chickpea Salad with Salmon and Feta

How to make chickpea salad with salmon and feta

Mounir: ‘I personally like it best when the fried salmon is still slightly raw inside.’

Preparation

1 Bring a pan of salted water to the boil and blanch the carrot for 3 minutes. Drain and leave to drain.
2 Meanwhile, for the whipped feta cream, place the sour cream, ricotta, feta and parsley in a food processor. Taste and season with salt and pepper.
3 Heat 1 tablespoon of butter in a frying pan over medium-high heat and fry the chickpeas with some salt and pepper for 3–5 minutes, until colored.
4 Remove the chickpeas from the frying pan and heat another tablespoon of butter. Place the salmon fillets skin-side down in the pan. Try not to move them and wait until the cooking has reached halfway up the fillets. Then turn off the heat and let the other side of the salmon cook for another 30–60 seconds. When you think the salmon fillets are almost cooked, remove them from the pan; they will continue cooking slightly.
5 Divide the kale over a large platter or four plates and drizzle with the extra-virgin olive oil. Divide the carrot and chickpeas over it, season with salt and pepper and place the salmon fillets on top. Add a dollop of whipped feta, garnish with the flat-leaf parsley and serve the rest of the feta cream in a small bowl.
