Recipe: Crispy Minced Meat Sandwich

Contrary to what the title might suggest, F*ck granola is not a book full of breakfast recipes. In fact, it is a plea to simply eat whatever you feel like, with a subtle middle finger to being on a diet forever. Author Jelle Beeckman, aka The Messy Chef, serves up unconventional recipes. For this recipe, he drove to Daan (Chef van der Lecq) in Amsterdam, where together they made this Thai sandwich with crispy minced meat.

Jelle: “Food takes me to the craziest places, with the craziest people. People I don’t actually know outside the internet, but with whom I do have something in common: a love of food. Last summer, I drove to Daan, a Dutch chef who is making quite a name for himself online. A return trip to Amsterdam where, after a few beers, we felt like making some kind of crispy Thai minced-meat sandwich. You can find the video on my social media; this is my Indian variation. Really. Not. Normal. Delicious!”

How to make the crispy minced meat sandwich

  • Fry the minced meat with all the other filling ingredients for 10 minutes. Make sure there are no overly large chunks in the minced meat. Season with salt and pepper.
  • Slice the sandwiches partly open, fill with a slice of cheese and two tablespoons of the minced meat mixture. Press down firmly.
  • Beat the eggs in a bowl. Use another plate for the flour and another one for the panko.
  • Now it takes a little fiddling (for me too), but trust me: it is worth it! Dip the filled sandwich in the flour, then the egg and finally the panko. Make sure everything is well coated with panko, including the edges and sides. You can repeat this process if desired. Let the sandwiches rest for 5 minutes.
  • Pour a generous splash of oil into a pan. It is best to fry one or two sandwiches at a time, then keep them warm in the oven.
  • Hold the sandwich between your thumb and index finger and sear the sides closed in the pan. This prevents any filling from falling out. Then fry the top and bottom until the entire sandwich is crispy.
  • Cut open the sandwiches and finish with some hot sauce.
