Recipe: Donnie’s Broodje Kippie

Wordsmith Donnie aka De Fenomeen has been rapping since a young age, was discovered by Vjeze Fur from De Jeugd van Tegenwoordig, and has enjoyed musical success ever since. Less well known is that he also has a cooking diploma and has worked behind the stoves in several Amsterdam restaurants. So Donnie knows exactly what he is talking about when he says: ‘If you don’t indulge in life, then what’s the point?’ He wrote an accessible cookbook full of crowd pleasers and guilty pleasures that are still homemade, ‘with little junk’.

How to make Donnie’s Broodje Kippie
- Peel and slice the garlic into thin slices.
- Marinate the chicken breast with the garlic, paprika, ground ginger, zest and juice of ½ a lime, and a little sunflower oil.
- Season with pepper & salt.
- Cover and leave to marinate for 10 minutes.
- Heat a frying pan and brown the chicken breast over high heat for 3 minutes on both sides.
- Lower the heat and cook the chicken for another 10–15 minutes until tender and juicy.
- Turn it regularly.
- Remove the chicken from the pan and wrap it in aluminum foil.
- Leave to rest for 3 minutes, then slice the chicken.
- Cut the rolls in half and spread with sandwich spread.
- Generously top with the sliced chicken, a few little gem leaves and a slice of tomato, then squeeze over some more lime juice.
For a healthier version, you can also cook the chicken in the oven. In that case, don’t use oil in the marinade. Wrap the chicken breast in baking paper so it doesn’t dry out, and bake for about 25 minutes in a preheated oven at 200°C.
