Recipe: Donnie’s vanilla ice cream with caramel sauce and Rice Krispies shards
Wordsmith Donnie aka De Fenomeen has been rapping since a young age, was discovered by Vjeze Fur from De Jeugd van Tegenwoordig, and has been doing musically well ever since. Less well known is that he also has a chef’s diploma and has worked in the kitchens of various Amsterdam restaurants. So Donnie knows exactly what he is talking about when he says: ‘If you don’t glorify in your life, then what fun are you having?’ He wrote an accessible cookbook full of crowd pleasers and guilty pleasures that are nevertheless homemade, ‘with little junk’.
Donnie: ‘Those Rice Krispies did it for me. I always knew some variant of vanilla ice cream and caramel sauce. It’s as old as humanity, but this version is still something different. I find the exciting experience of those Rice Krispies the most delicious part. Every now and then, your dish should also be like your relationship: you have to keep it exciting to keep it interesting, ladies and gentlemen.’
How to make Donnie’s vanilla ice cream with caramel sauce and Rice Krispies shards
- Start with the caramel for the Rice Krispies shards.
- Heat the sugar with 4 tbsp water in a small saucepan over medium heat. Stay nearby and do not stir until the sugar begins to caramelize.
- Remove the pan from the heat when the caramel is light brown. Be careful, caramel is extremely hot.
- Stir in the Rice Krispies with a heat-resistant spatula.
- Pour the mixture onto a baking sheet lined with parchment paper and spread it as thinly as possible over the sheet.
- Leave to cool and break the Rice Krispies caramel into shards.
- For the caramel sauce, heat the sugar with a splash of water in a tall pan over medium heat.
- Stay nearby and do not stir until the sugar begins to caramelize.
- Meanwhile, heat the heavy cream in another small saucepan.
- Carefully pour the warm heavy cream into the caramel when it is golden brown. Be careful, it will splatter and the caramel may clump.
- Stir gently until it becomes a smooth sauce.
- Turn off the heat and stir the butter into the sauce.
- Optionally, add a pinch of sea salt to the caramel sauce.
- Leave the sauce to cool slightly.
- You can also serve the caramel sauce cold.
- Serve the vanilla ice cream with the caramel sauce and Rice Krispies shards.
