Recipe: fish with garlic and chilli pepper

Rosa: ‘I’m very happy that I live in Sydney and that the fish market is close to my home. In Mexico City, it was more difficult to buy fresh fish and seafood because the city is located in a valley, far from the ocean. I have embraced Australia’s favourite fish – barramundi – and discovered that the easiest way to prepare a barramundi fillet properly is to cook it ajillo style, with garlic and a guajillo chilli spice blend.’

Chilli salt

‘I usually cook with whole chillies, so I get frustrated when I find pieces of broken chilli at the bottom of my shopping bag. So I decided to put them to good use. I added them to my salt shaker to make chilli salt – and it worked well!’

How to make fish with garlic and chilli pepper

  • Season the fish with salt and white pepper, about 3 pinches per fillet. Set the fillets aside.
  • Using scissors, cut the guajillo chillies into strips 5 mm wide.
  • Heat the olive oil and butter in a frying pan over medium heat. Fry the garlic, tossing it regularly, for 2 minutes until fragrant and changing colour. Fry the chilli strips along with it for 3 minutes; the chilli will turn the butter and garlic orange. Use a slotted spoon to remove the garlic and chilli strips from the pan and set them aside.

  • Fry the fish in the pan for 4 to 5 minutes on each side until the fillets are just cooked through. Return the garlic and chillies to the pan and heat everything through for 1 minute.
  • Divide the fish and garlic-chilli sauce between plates and serve with arroz Mexicano and a few lime wedges on the side.
