How to get a thick, foamy layer on your cocktails

Shaking cocktails is fun, but not everyone has the skills (and strong muscles) of a cocktail shaker. And good shaking happens to be one of the tricks for getting that perfect foamy layer on your Pornstar Martini or Whiskey Sour. So what do you do? Open your kitchen cupboard.

Because there’s something in there that will give you a foamy cocktail in no time (and with no effort).

Brilliant hack

That creamy, foamy layer on cocktails usually comes from egg white. Or aquafaba, if you want to make it vegan-friendly. Don’t or can’t whip it up yourself? Grab your handheld milk frother. You know, the thing you also use to make your cappuccino wonderfully creamy. Pour the egg white into a separate glass, hold the glass at an angle and whip it with your milk frother. Then pour it over your cocktail. Super simple, right? Tip: you’ll get thicker foam (a bit like meringue) if you add a splash of syrup or liqueur to the egg white.

It turns out this trick also works with an electric milk frother. The kind you put down, press a button on and let the milk foam by itself. Even less work, hooray! In this case, pour all the ingredients for your cocktail into the milk frother and let it do the work. So the egg white doesn’t need to be shaken separately. Brilliant: this also works if you want to create a foamy layer on your Espresso Martini, or on any kind of egg-white-free martini cocktail (Pumpkin Spice Espresso Martini? Matcha Martini?) you like. Basically, any cocktail that could use a creamy layer.

So forget that expensive cocktail-shaking course and clear your schedule of muscle-building sessions at the gym. All you need is your old, trusted milk frother. It looks just as spectacular as shaking cocktails, believe me.
