Chicken and comfort food always seem to go hand in hand. The sticky, sweet-and-spicy sauce gives the oil-fried, marinated chicken such a delicious flavor that you’re guaranteed to grab one piece too many.

How to make Korean Fried Chicken

  • If using chicken thighs, cut them into large pieces. Mix the flour with the baking soda, salt, white pepper and cinnamon in a bowl. Add the chicken and mix well so that all the chicken is coated with the flour mixture.
  • Heat the sunflower or soybean oil in a sturdy pan over high heat, or preheat a deep fryer to 185 °C. Check whether the oil is hot enough by placing a piece of chicken in it. If the oil starts bubbling immediately, it is at the right temperature. Fry the chicken until crisp and golden brown. Drain well.
  • Toss the fried chicken through the sauce. If serving the chicken as a snack, serve it with finely chopped spring onions.

For the sauce

Ingredients

  • 3 garlic cloves
  • 1⁄2 lime
  • 5 tbsp Korean chili paste (gochujang)
  • 2 tsp sesame oil
  • 1 tbsp ginger syrup
  • 2 tsp mirin
  • 1 tsp cinnamon

Preparation
Finely chop the garlic and squeeze the lime. Mix with the remaining ingredients in a mixing bowl until you have a sauce.
