Recipe: fried egg inside a bagel

Put an egg in your bagel hole! No, really; incredibly delicious, convenient in one pan, looks great, and that’s how you win at making breakfast.

Why??

For a long time, my husband didn’t understand why I found bagels so interesting. Bland, chewy, tasteless, all-round soooooo boring – that’s what he thought. Subconsciously discouraged (as sometimes happens), I left them alone for a while, until I decided to liven up the last birthday breakfast (croissant, pastry, juice in bed) with a freshly toasted bagel, a thick layer of Philadelphia, perfectly ripe avocado, a slice of good salmon, a twist of pepper, mmmmmmm…

Mix it up

Well, now everyone in the house is on board. Bagels almost every weekend. We save the salmon for special occasions (something has to remain special!), but variations like pastrami, mustard and sauerkraut, or hummus, arugula and tomato are also fantastic. Falling back on the basic Philly-tomato combo – always a good idea. And then we came across this! So much fun: a fried egg inside a bagel (hole).

How to make a fried egg in a bagel

Place a non-stick frying pan over medium heat. Cut a bagel in half and spread the cut sides with unsalted butter. Place the halves rounded side down, cut side up, and leave them for 2 minutes until the bottoms are nicely golden and toasted. Turn the heat to low and flip the halves so the buttered side is now on the bottom. Crack an egg into each bagel hole and pour a tablespoon of water into/around the inner edge of the pan. Immediately cover the pan with a lid. Remember that tip about adding a little water to your fried egg? Same story. Your egg fries and steams at the same time until cooked through, so you don’t have to flip anything, and your bagel won’t burn either.

Top with whatever you like. Salt and pepper, definitely; by the way, I would have fried some bacon in that same pan first YUMM. You can sprinkle dukkah or furikake over it, make it fun with salmon roe, or grate bottarga on top – the possibilities are endless!
