Recipe from the World’s Most Famous Noodle Bar Wagamama: Chicken Katsu Sando

How to make Wagamama’s chicken katsu sando
- Cut the chicken breast crosswise into two pieces, like a sandwich.
- Place the egg, flour and panko in three separate wide, shallow bowls. Dip the pieces of chicken successively in the flour, egg and breadcrumbs. Press the breadcrumbs in to coat the chicken really well (the thinner the chicken breast, the sooner it will be cooked).
- Pour the oil into a saucepan over medium heat and, once the oil is hot, deep-fry the breaded chicken breasts for 3–4 minutes per side. Place them on a plate covered with kitchen paper to absorb the excess oil. Soft-boil the eggs if you haven’t already done so.
- Bring a saucepan of water to the boil and blanch the savoy cabbage for 30 seconds. Then plunge it into ice-cold water for 1 minute, drain and set aside. Mix the mayonnaise with the curry paste until smooth.
- Spread the curry mayo over 2 toasted brioche slices and place them on two plates. Add a layer of savoy cabbage, the chicken schnitzel and the egg, then cover with the other 2 brioche slices.
- Cut the sandwiches in half with a sharp knife and enjoy!
