Recipe: grilled artichokes with curry mayonnaise

  • Remove the thick outer leaves from the artichokes and cut off a large part of the stems if they are long, as shown in the photo. The part of the stem that remains attached is an extension of the delicious heart. If the skin of the stem looks tough, you can peel the stems.
  • Bring a large pan of water to the boil, add the artichokes and cook them for 20 minutes, until you can easily remove the outer leaves. Leave them to cool slightly so you can handle the artichokes, then cut them in half. Remove the hairy part (the ‘choke’) from the centre.
  • Whisk all the marinade ingredients together and rub the halved artichokes with the mixture. Leave to marinate for about 30 minutes. Meanwhile, mix all the ingredients for the curry mayonnaise together and cover and refrigerate until ready to use.
  • Fill the barbecue with charcoal, light it and wait until the coals are white-hot.
  • Place the artichokes cut-side down on the grill. Set some of the marinade aside. Grill them for about 15 minutes, turning regularly, until beautifully grilled. Artichokes are ready when they are ready, so grill until the bottom (the heart) is tender.
  • Spoon some of the remaining marinade over the artichokes and serve with the curry mayonnaise. Garnish with the chopped coriander.
  • If you have never eaten a whole artichoke before: pull a leaf from the grilled artichoke, dip it in the curry mayonnaise and scrape the flesh off with your teeth. You can discard the rest of the leaf. Once all the leaves have been eaten, cut the artichoke heart into pieces and enjoy it with even more curry mayonnaise.
