Recipe: Julius Jaspers’ ultimate veggie burger

We’re huge fans of Julius Jaspers’ new cookbook, which is packed with the coolest BBQ recipes. Of course: lots of meat and fish, but thankfully the vegetarians among us have also been considered. Enter the ultimate veggie burger. When you start, you think: where is this going? But take your time and you’ll end up with a burger that even carnivores will love.

How to make the veggie burger
- Bring the rice and water to the boil and let it cook gently for 40 minutes, until all the water has been absorbed. Allow to cool until lukewarm.
- Mash the black beans with a fork and finely grind them together with the bell pepper, onion, mushrooms and garlic in the food processor.
- Finely grind the cooled rice in the food processor together with the mozzarella.
- Mix the black bean mixture with the mozzarella rice.
- Mix the eggs with cayenne pepper, cumin and sriracha sauce, then fold into the bean dough
- Stir in the panko until you have a sticky, compact mixture.
- Shape the mixture into six burgers and bake for 5 minutes in a preheated oven at 220 °C. Allow to cool.
- Grill the cooled veggie burgers on the barbecue for 4 minutes on each side, until they are thoroughly hot inside.
How to make the JBG burger sauce
- Blend the garlic and mayonnaise until smooth in the food processor
- Stir in the ketchup, gherkin, finely chopped onion and sriracha by hand.
Tip: Julius assembled his burgers on briefly toasted spelt buns, lollo verde, braised onion and the JBG burger sauce.
