Recipe: Katjang pedis that you can’t stop eating

Indonesian katjang pedis, or spicy peanuts, we love them! Especially when they’re homemade. We don’t make them in a deep fryer, though, because coated peanuts don’t fry very neatly, leaving you with a lot of mess afterwards. A small pan of oil on the stove, keep a close eye on it, turn on the extractor hood or open a window, and it will all work out perfectly.

Preparation

Mix everything for the spice mixture and stir in the egg. Now add the peanuts and stir. Put the flour in a bowl, add a spoonful of the peanut batter mixture to the bowl with flour and shake the bowl back and forth until the peanuts are coated on all sides. Set them aside and add the next spoonful of peanuts to the bowl with flour.

Gone in one go

Heat the oil in a pan until it’s hot enough for frying. Fry the piles of peanuts until golden brown. Place them on kitchen paper to drain and cool. Store them in an airtight tin or do as we do: eat them all on the same evening.
