Recipe: Lentil and Cheese Waffles

Lentils are making a major comeback. Increasingly, you’ll find them not only in salads and other vegetable dishes, but also in cakes and cookies. As these savoury cheese waffles show, lentils can be surprisingly delicious. The new cookbook Lentils! by Joke Boon is therefore entirely dedicated to this versatile legume.

“For those who prefer a savoury start to the day, these lentil and cheese waffles are a great way to begin. They’re extra delicious with some grilled tomatoes and a few slices of avocado on the side. They’re also tasty for lunch or a light dinner with a bowl of (tomato) soup. If you like, you can soak the lentils for half an hour to overnight in the specified amount of water. This makes them easier to grind.”

How to make lentil and cheese waffles

  • Grind the lentils together with the lukewarm water in a food processor or blender for 2–3 minutes, until you have a thick, creamy batter.
  • Add the remaining ingredients and mix briefly.
  • Heat a waffle iron and lightly grease it with oil if necessary.
  • Spoon 1–1½ gravy-spoonfuls of batter into the centre of the appliance and cook the waffle until done and golden brown, in approximately 3 minutes. Sprinkle with the grated Parmesan.
