Recipe: little apple pies with vanilla

We still have to wait a little while for the new season of Heel Holland Bakt with new, bumbling home bakers. The baking book is packed with delicious recipes featuring apples (and pears!), such as these little apple pies with vanilla, to bake at home.

Unexpected guests or a spontaneous craving for something sweet? Then this recipe is a winner. You usually have a few apples at home, and tortilla wraps are always handy to keep in stock. Thyme grows in the garden or on your balcony, and otherwise you can use the dried variety (not too much, as it tastes considerably stronger). No vanilla pod? Replace the vanilla with cinnamon or ground ginger.
How to make the little apple pies
1. MAKE THE APPLE FILLING
- Preheat the oven to 200 °C. Quarter the apples, remove the cores and cut the flesh into wedges. Put 1 tablespoon of butter in a non-stick frying pan and add the apple. Halve the vanilla pod lengthwise, scrape out the seeds with a knife and add them to the apple. Add the honey and thyme sprigs and cook all over for 5 minutes, until warm and tender but still firm.
2. BAKE + FILL THE TORTILLAS
- Line a baking sheet with baking paper. Place the tortilla wraps on the baking sheet, brush them with the melted butter and sprinkle with sugar and cinnamon. Bake the wraps in the oven for approximately 5 minutes, until crisp. Remove from the oven and divide the apple and yoghurt over them. Serve immediately.
