Recipe: Michiel van der Eerde’s delicious Thai beef salad

How to make Michiel van der Eerde’s Thai beef salad
- Season the beef generously with the chili & lime and garlic & pepper spice mixes.
- Separate the romaine lettuce into leaves and wash them under cold running water. Drain and pat dry. Set four leaves aside and finely slice the rest.
- Mix all the dressing ingredients. Cut the mango into fine strips and marinate them in a few spoonfuls of the dressing.
- Cut the garlic cloves into thin slices and briefly deep-fry them at 160 degrees. Drain on kitchen paper and season with salt.
- Heat a small splash of olive oil in a pan over the heat and sear the beef in it. Add half a lime and roast it in the pan.
- To serve: Cut the entrecôte into thin slices.
- Arrange two whole lettuce leaves nicely on a plate. Divide the finely sliced lettuce, red onion, beef slices and mango over them. Finish with coriander, fried garlic and extra dressing. Serve with the roasted lime.
