Recipe: Miljuschka’s granola tart

Maybe you had already seen it, maybe it completely passed you by: culinary queen Miljuschka Witzenhausen has a new TV programme titled ‘Miljuschka Kookt’. Take three guesses what she does in that programme. That’s right. And not just cooking, but baking too. In the first episode, she conjures up a granola tart that is truly something to behold.

It’s not difficult to make. That’s the whole concept of the cooking programme: easy inspiration for every day. Another nice thing: it’s a healthy cake too. Ideal as a dessert, but also for breakfast. Because really, who wouldn’t want to have cake for breakfast? Exactly, get baking!
Here’s how to make Miljuschka’s granola tart:
- Place a colander over a bowl and line it with the cheesecloth (or a thin tea towel). Pour the yoghurt into it, fold the cheesecloth closed, press it lightly, put the whole thing back in the fridge and let the yoghurt drain into the bowl so it becomes hangop. Note: do this a day in advance.
- Put the desiccated coconut, coarse rolled oats and flaked almonds in a bowl and mix them.
- Melt the coconut oil in the pan over low heat; once melted, add some maple syrup and honey.
- Pour the coconut oil mixture into the dry mixture. It doesn’t need to become very wet.
- Once everything is well mixed, add an egg white and mix this in thoroughly as well.
- Then put this mixture into the quiche tin and press it down firmly.
- Put it in the oven at 180 degrees for about 20 minutes.
- Take the hangop out of the fridge; if all goes well, it will now have become completely firm. Put it in a bowl, grate some lime zest over it and squeeze the lime over it. Also add some honey. Mix everything together well.
- Take the base out of the oven and remove it from the tin.
- Spread the hangop over it and decorate the tart with your choice of fruit.
- Enjoy your meal!
