Recipe: Mint-Pineapple Spritzer

Preparing the compote
- Preheat the grill.
- Place the pineapple slices in a single layer on baking paper. Grill until the pineapple starts to color.
- Sprinkle the sugar over them and let it caramelize under the grill.
- Allow to cool, purée in the blender and add water if necessary. Keeps for 7 to 10 days in the refrigerator.
Preparing the spritzer
- Muddle the pineapple and mint into an even layer at the bottom of the glass.
- Add ice and the pineapple compote, then top up with sparkling water.
- Stir and serve with a slice of pineapple and a sprig of mint.
