Recipe: mussels with fries and tartar sauce just like your grandma makes them

We’re fans of her recipe for the ultimate mussels with fries and tartar sauce.

How to make mussels with fries and tartar sauce
- Fill a large tub with water and add 2 tbsp of salt. Leave the mussels in the salt water for about 3 hours.
- Peel the potatoes, rinse them and cut them into fries. Rinse them again and dry them well with a clean kitchen towel or paper towel. Heat the oil in the deep fryer to 160 °C and fry the fries once. Drain.
- Make the tartar sauce first. Finely chop the spring onion and garlic and mix them with the parsley into the mayonnaise.
- Season with pepper and salt.
- Remove the beards and barnacles from the mussels and rinse them again. Drain.
- Dice the celery and briefly fry it together with the onion in a little butter in the mussel pot. Season with a little salt and plenty of pepper. Add the mussels, put the lid on the pot and shake it. Repeat until all the mussels have opened.
- Fry the fries a second time at 180 °C until beautifully golden brown. Serve the mussels with the fries and tartar sauce.
