How to make the loaded veggie nachos

  • Preheat the oven to 180°C.
  • Cut the tortillas into triangles. Mix with the olive oil and season with the cumin powder, salt and pepper. Spread the tortilla wedges over a baking sheet lined with parchment paper and bake for 4–5 minutes until brown and crispy.
  • Drain the corn and kidney beans, rinse and leave to drain well in a colander. Cut the tomatoes and red onion into small cubes. Cut the avocado into cubes and mash with a fork until you have guacamole. Season the guacamole with a pinch of pepper, salt and chili flakes. Roughly chop the cilantro, including the stems.
  • Spread the nachos over a deep dish. Spread the arugula over them. Mix the tomato, red onion, corn and kidney beans together and spoon over the nachos. Garnish with the guacamole, cilantro and, if desired, a little garlic sauce.
