How to make the tortilla kapsalon

  • Preheat the oven to 200°C.
  • Cut the tortilla into strips 2 cm wide and, if necessary, cut the long strips once or twice more to make ‘fries’.
  • Spread the tortilla fries over a baking tray lined with baking paper and brush them with a little olive oil. Bake them in the oven for about 10 minutes until golden brown and crispy.
  • Meanwhile, mix the chicken breast strips with the kebab spices and a splash of olive oil. Fry the chicken kebab in a frying pan over medium heat until cooked through.
  • Cut the onion into rings, the bell pepper and iceberg lettuce into strips, and the cucumbers and tomatoes into wedges.
  • Divide the tortilla fries over a small oven dish and spoon the chicken kebab on top. Sprinkle the cheese over it and leave to gratinate in the oven for another 10 minutes. Remove the dish from the oven, distribute the vegetables over it, finish with a tuft of garden cress and drizzle the garlic sauce over it.
