How to make the oesterij special with margarita mezcal
- Open the oysters. Pour the liquid into a bowl and set the oyster shells aside.
- Add all the ingredients for the margarita mezcal to the bowl. Stir and place in the freezer for at least 1 hour.
- Mix the seawater with the lecithin and blend into a frothy mixture using a stick blender.
- Arrange the granité in the oyster shells and finish with the seawater foam, Piment d’Esplette and lime zest.
