It is widely known that the way to the heart is through the stomach. The cookbook Shoukran by Abdel Alaoui — a tribute to his mother — provides a whole new dose of loving recipes you will want to make right away. Shoukran means thank you in Arabic, and the choice of title is no coincidence: Abdel thanks his mother for the love of cooking she passed on to him. This book contains so many unbelievably delicious Moroccan dishes that we have been eating Moroccan food for days…

All desserts and pastries from Morocco contain the thousand-and-one aromas and flavours that Abdel became familiar with during his childhood. He grew up in Oujda, where his mother taught him how to cook. In Shoukran, you will find 100 of his favourite recipes. The oranges with cinnamon are a wonderfully delicious and simple dish. This recipe perfectly captures contemporary Moroccan cuisine: easy to prepare, full of flavour and wonderfully refreshing. Once you have tried this, you will never want to eat oranges any other way.

How to make oranges with cinnamon

  • Peel the oranges and remove the white pith as well.
  • Using a sharp knife, cut the flesh into very thin slices.
  • Arrange the orange slices on a large plate.
  • Put the honey in the microwave for 1 minute to make it nice and runny, then mix it with the orange blossom water. Pour this mixture over the oranges and sprinkle them with cinnamon.
  • Serve the oranges chilled and sprinkled with the almonds.
