Recipe: orzo ‘carbonara’ with creamy burrata

Of course we know this isn’t an OG carbonara! But pasta with deliciously salty ham and soft, creamy cheese is always a good idea, and you can have this on the table in no time. So today: a carbonara-style dish with a surprisingly fun type of pasta…

Orzo! Do you know it? It looks like a cross between pasta and rice, cooks quickly and can easily be served with that creamy burrata (we love burrata!), crispy prosciutto and spinach for a healthy twist, all on the table in under twenty minutes. When we came across this recipe from Half Baked Harvest, we thought, ‘this is a hit’, so we’re curious to see what you make of it!
How to make this delicious orzo with burrata and prosciutto
- Preheat the oven to 200° C.
- Line a baking sheet with parchment paper and place the ham on it in a single layer.
- Place in the oven and bake until crispy, 8–10 minutes.
- Meanwhile, whisk the egg, Parmesan, garlic, basil, thyme and chives in a large bowl or mixing bowl.
- Bring a large pot of plenty of water to the boil.
- Cook the orzo al dente according to the package instructions.
- Scoop a mug or cup of cooking water from the pot, then drain the orzo.
- Immediately add the orzo to the bowl with the cheese and egg mixture and stir well and quickly.
- Add a little pasta water and toss well until you have the consistency of a sauce.
- Add pasta water spoonful by spoonful if the sauce is still too thick.
- Add the butter and spinach, stir, and season with pepper and a little salt (the salty ham will be added later too).
- Divide among plates, tear the burrata over the top, sprinkle with the ham pieces and a few more fresh herbs.
- Drizzle with olive oil, and it’s ready!
