Recipe: oven-baked gratin parmentier

Not new, but still top-notch, is the video by Chefclub that went viral, showing how to make a stunning gratin parmentier. Pardon, parmentier, you say? And what is that?

What if we told you it’s simply the culinary term for potato casseroles from the oven – that sounds a lot more approachable, non? Just a little fancier and more fun-looking than your standard layer of ground meat with mashed potatoes thrown on top and baked at 180, this dish features meatballs and potato slices arranged in the shape of a flower. Delicious!
How to make the Gratin Parmentier casserole with ground meat
- Preheat the oven to 200° C.
- Mix the ground meat with the onion, parsley and paprika, and season with salt and pepper.
- Shape into meatballs.
- Cut the potatoes into slices and arrange them on the bottom of a round baking dish.
- Also stand potato slices upright all around the edge.
- Now place the meatballs on the potato base, leaving little space between them.
- Place potato slices upright between the meatballs too; bonus points if you manage to create a somewhat regular pattern.
- Pour the béchamel over everything.
- Sprinkle the grated mozzarella over the top and place in the oven.
- Gratinée for 15 minutes and serve immediately.
- Delicious with a green salad and homemade vinaigrette.
