What is sobrasada?

Sobrasada is the crown jewel of Spanish charcuterie. A spicy spreadable sausage from the Balearic Islands. Unlike its Italian counterpart ’nduja, this spreadable sausage is much less well known. Delicious with drinks and in this sandwich!

How to make a sandwich with sobrasada

  • Preheat the oven to 200 °C.

  • Heat a splash of olive oil in a pan over medium heat. Add the butter and let it melt. Add the onions and sugar, sprinkle with a little salt and caramelize over low heat for 20 to 25 minutes. Stir regularly for an even result. Remove the onions from the pan and let them drain briefly on kitchen paper.

  • Meanwhile, fry the sobrasada in a dry pan for a few minutes (the sausage is fatty enough on its own), until it softens.

  • Halve the baguette lengthwise. Spread the sobrasada over the bottom half. Then top with cheese and distribute the caramelized onions over it. Cover with the top half of the bread and bake for 5 to 10 minutes, or until the cheese has melted, in the center of the oven.

  • Serve warm.
